Ingredients

- 1 cup pitted dates, chopped
- 1 cup walnuts, chopped
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup milk
Instructions
- Preheat the oven to 350°F (175°C) and grease a sheet pan.
- In a bowl, mix together the chopped dates and walnuts. Set aside.
- Cream the sugar and butter together until light and fluffy (about 3-4 minutes).
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- Gradually add the dry mixture to the wet mixture, alternating with the milk, until well combined.
- Fold in the date and walnut mixture until evenly distributed.
- Transfer the batter to the prepared sheet pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For added flavor, you can toast the walnuts before adding them to the batter. Store the cake in an airtight container for up to a week.
