Ingredients

  • 2 cups Fresh Apricots or 1 can Tinned Apricots
  • 1 cup Almonds, sliced or chopped
  • 8 oz Cream Cheese, softened
  • 10 sheets Fillo Pastry
  • 1/4 cup Sugar (optional)
  • 1/4 cup Butter, melted (for brushing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash and slice fresh apricots in half, removing the pit.
  3. Combine cream cheese, chopped almonds, and sugar in a mixing bowl until smooth.
  4. Lay a sheet of fillo pastry on a surface and brush lightly with melted butter.
  5. Layer another sheet on top, brushing with butter again.
  6. Spread the cream cheese mixture along one edge of the fillo pastry.
  7. Top with slices of apricots.
  8. Roll the fillo pastry over the filling to form a log or triangle shape, brushing with butter.
  9. Place filled pastries on a baking sheet lined with parchment paper.
  10. Bake for 20-25 minutes until golden brown and crisp.
  11. Cool slightly before serving warm or at room temperature.

Notes

For a richer flavor, use high-quality European-style butter and toast almonds lightly. Can be made vegan with plant-based cream cheese.
