- 2 cups Fresh Apricots or 1 can Tinned Apricots
- 1 cup Almonds, sliced or chopped
- 8 oz Cream Cheese, softened
- 10 sheets Fillo Pastry
- 1/4 cup Sugar (optional)
- 1/4 cup Butter, melted (for brushing)
Instructions
- Preheat your oven to 350°F (175°C).
- Wash and slice fresh apricots in half, removing the pit.
- Combine cream cheese, chopped almonds, and sugar in a mixing bowl until smooth.
- Lay a sheet of fillo pastry on a surface and brush lightly with melted butter.
- Layer another sheet on top, brushing with butter again.
- Spread the cream cheese mixture along one edge of the fillo pastry.
- Top with slices of apricots.
- Roll the fillo pastry over the filling to form a log or triangle shape, brushing with butter.
- Place filled pastries on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes until golden brown and crisp.
- Cool slightly before serving warm or at room temperature.
Notes
For a richer flavor, use high-quality European-style butter and toast almonds lightly. Can be made vegan with plant-based cream cheese.
