Description
A moist, warmly spiced cake made with applesauce for natural sweetness and tenderness, topped with a creamy cinnamon glaze – the perfect fall dessert that stays fresh for days!
Ingredients
1 cup applesauce (store-bought or homemade)
½ cup sugar
⅓ cup avocado oil (or other neutral oil)
¼ cup almond milk
3 large eggs
1 teaspoon vanilla extract
1 teaspoon apple cider vinegar
¾ cup all-purpose flour (spooned and leveled)
¾ cup whole wheat flour (spooned and leveled)
½ cup almond flour (spooned and leveled)
2 teaspoons Apple Pie Spice
2 teaspoons baking powder
½ teaspoon sea salt
¼ teaspoon baking soda
½ cup chopped walnuts
Cream Cheese Frosting (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease 9×13-inch baking pan.
- Whisk flour, baking soda, spices and salt in bowl.
- Cream butter and both sugars until fluffy. Beat in eggs one at a time, then vanilla.
- Alternately add flour mixture and applesauce, beginning and ending with flour. Fold in nuts and raisins if using.
- Spread batter in pan. Bake 35-40 minutes until toothpick comes out clean.
- Cool completely. Whisk glaze ingredients and drizzle over cake.
Notes
- For extra moisture, use chunky applesauce
- Substitute 1/2 cup applesauce with pumpkin puree for variation
- Cake tastes even better the next day as flavors meld
- Freezes well without glaze for up to 3 months
