  • 2 cups peeled and chopped fresh apples
  • 1/2 cup chopped walnuts (optional)
  • 1 cup brown sugar, packed (for icing)
  • 1/4 cup unsalted butter (for icing)
  • 1/2 cup heavy cream (for icing)
  • 1 teaspoon vanilla extract (for icing)

Instructions

  1. Preheat oven to 350°F (175°C) and grease and flour a pan.
  2. Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a medium bowl.
  3. Cream together granulated sugar, brown sugar, and butter in a large bowl until light and fluffy.
  4. Add eggs one at a time and stir in vanilla extract.
  5. Gradually beat in flour mixture alternately with buttermilk, then fold in apples and walnuts.
  6. Pour batter into prepared pan(s) and bake: 30-35 minutes for round pans, 40-45 minutes for a 9×13 pan.
  7. For icing, combine brown sugar, butter, and heavy cream in a saucepan, bring to boil, then stir in vanilla extract.
  8. Pour warm caramel icing over the cooled cake.

Notes

Use tart apples for best flavor. Ensure butter and eggs are at room temperature for optimal mixing.
