- 1 cup brown sugar, packed (for icing)
- 1/4 cup unsalted butter (for icing)
- 1/2 cup heavy cream (for icing)
- 1 teaspoon vanilla extract (for icing)
Instructions
- Preheat oven to 350°F (175°C) and grease and flour a pan.
- Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a medium bowl.
- Cream together granulated sugar, brown sugar, and butter in a large bowl until light and fluffy.
- Add eggs one at a time and stir in vanilla extract.
- Gradually beat in flour mixture alternately with buttermilk, then fold in apples and walnuts.
- Pour batter into prepared pan(s) and bake: 30-35 minutes for round pans, 40-45 minutes for a 9×13 pan.
- For icing, combine brown sugar, butter, and heavy cream in a saucepan, bring to boil, then stir in vanilla extract.
- Pour warm caramel icing over the cooled cake.
Notes
Use tart apples for best flavor. Ensure butter and eggs are at room temperature for optimal mixing.
