Deliciously flaky turnovers filled with spiced Granny Smith apples, perfect for a cozy treat any time of year.

- 1 pound (2 sheets) puff pastry (thawed if frozen)
- 2 large (or 4 small) Granny Smith apples (peeled, cored, and diced)
- 1 tablespoon unsalted butter
- 1/8 cup brown sugar
- 1/8 cup granulated sugar
- 1 teaspoon cornstarch
- 1/2 teaspoon cinnamon
- 1 pinch salt
- 1 large egg
- 1 tablespoon milk
- 2/3 cup powdered sugar
- 1 tablespoon milk (for thinning glaze)
Instructions
- In a medium saucepan over medium heat, melt the butter. Add the diced apples and cook for about 5 minutes until they just start to soften.
- Reduce the heat to low, stir in brown sugar, granulated sugar, cornstarch, cinnamon, and pinch of salt. Cook for an additional 3-5 minutes until the apples are soft but retain their shape. Remove from heat and let cool.
- On a lightly floured surface, roll each puff pastry sheet into approximately an 11-inch square. Cut each sheet into 4 equal squares.
- Place 1-2 tablespoons of the apple filling in the center of one pastry square.
- In a small bowl, beat the egg with 1 tablespoon of milk. Brush this egg wash on two adjacent sides of the square.
- Fold the pastry over to form a triangle, press down on the edges to seal and crimp with a fork.
- Cut 2-3 small slits in the top of each turnover. Brush the tops with the remaining egg wash.
- Preheat your oven to 375°F (190°C). Refrigerate the turnovers for about 15 minutes.
- Line baking sheets with parchment paper and place turnovers on the sheets, ensuring they are spaced 1 inch apart.
- Bake for 20-25 minutes until golden brown.
- For the glaze, mix powdered sugar with 1 tablespoon of milk until smooth, and drizzle over warm pastries.
Notes
Keep puff pastry cold until ready to roll out to avoid compromising flakiness. Consider adding caramel, nuts, or dried cranberries for variety.
