- 1 can chickpeas, drained and rinsed
- 1 apple, diced (Honeycrisp or Fuji recommended)
- 1/2 cup pecans, chopped
- 1/4 cup tahini
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Whole grain or gluten-free bread slices
Instructions
- Mash the chickpeas in a large bowl until mostly smooth, leaving some chunky pieces for texture (2-3 minutes).
- Mix in the diced apple and chopped pecans until evenly distributed (about 1 minute).
- Create the dressing by adding tahini, lemon juice, salt, and pepper to the bowl, and mix until combined (1-2 minutes).
- Assemble the sandwich by generously serving the chickpea salad mixture onto slices of bread, then close and slice to serve.
Notes
Store any leftover chickpea salad in the fridge for up to three days. Assemble sandwiches just before serving to maintain freshness.
