Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 apple, diced (Honeycrisp or Fuji recommended)
  • 1/2 cup pecans, chopped
  • 1/4 cup tahini
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Whole grain or gluten-free bread slices

Instructions

  1. Mash the chickpeas in a large bowl until mostly smooth, leaving some chunky pieces for texture (2-3 minutes).
  2. Mix in the diced apple and chopped pecans until evenly distributed (about 1 minute).
  3. Create the dressing by adding tahini, lemon juice, salt, and pepper to the bowl, and mix until combined (1-2 minutes).
  4. Assemble the sandwich by generously serving the chickpea salad mixture onto slices of bread, then close and slice to serve.

Notes
