Description

Ingredients

  • 2 cups apple cider
  • 1 cup granulated sugar
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 recipe homemade pie crust (or 1 box (14.1 ounces) store-bought)
  • 6 medium Granny Smith apples, peeled and cored
  • 6 tablespoons unsalted butter, softened
  • 1/2 cup light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Vanilla ice cream, for serving

Instructions

  1. Prepare the Sauce: In a medium saucepan over medium heat, combine the apple cider, granulated sugar, and unsalted butter. Bring to a boil, then reduce heat and simmer for about 5 minutes until slightly thickened. Remove from heat and stir in the vanilla extract. Set aside.
  2. Preheat Your Oven: Preheat your oven to 400°F (200°C) and spray a 9×13-inch baking dish with nonstick spray.
  3. Prepare the Pie Crust: Roll out your pie dough into a large rectangle approximately 24×16 inches thick. Cut it into six 8×8-inch squares.
  4. Prepare the Apples: Place one apple in the center of each dough square. Fill the center with 1 tablespoon of softened butter and sprinkle with a mixture of light brown sugar, ground cinnamon, and ground nutmeg.
  5. Wrap the Apples: Moisten the edges of the dough with water and wrap it around the apples, sealing the edges securely.
  6. Arrange and Bake: Place the wrapped apples in your prepared baking dish and pour the cooled apple cider sauce over the top. Cover with aluminum foil and bake for 25 minutes.
  7. Finish Baking: Remove the foil and bake for an additional 25-30 minutes until the dumplings are golden brown and the apples are tender.
  8. Serve: Remove from the oven and allow to cool slightly. Serve warm with a scoop of vanilla ice cream on top!
