- 1 cup graham cracker crumbs
- 1 tablespoon granulated sugar
- 3 tablespoons unsalted butter, melted
- 1/2 cup all-purpose flour
- 3 tablespoons light brown sugar
- 3 tablespoons granulated sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon ground cinnamon
- 1/4 cup unsalted butter, melted
- 2 packages cream cheese (8 ounces each), room temperature
- 1/2 cup granulated sugar
- 1/4 teaspoon vanilla extract
- 2 large eggs, room temperature
- 1 can (21 ounces) apple pie filling, chopped
- 1 cup confectioners’ sugar
- 2–3 tablespoons whole milk
Instructions
- Preheat the oven to 350°F (175°C). Line the bottom of a 7-inch springform pan with parchment paper.
- Prepare the crust by mixing graham cracker crumbs, 1 tablespoon sugar, and 3 tablespoons melted butter. Press into the bottom of the pan.
- Make the crumble topping by combining flour, light brown sugar, granulated sugar, cornstarch, and cinnamon. Mix with melted butter until crumbly.
- Prepare the cheesecake filling by beating cream cheese until smooth. Gradually add sugar and vanilla, mixing until combined. Add eggs one at a time.
- Layer half of the cheesecake filling over the crust, add the apple pie filling, then pour the remaining cheesecake batter on top.
- Add the crumble topping evenly over the cheesecake layer.
- Set the springform pan in a roasting pan, pouring hot water into the roasting pan halfway up the sides.
- Bake for 65-70 minutes until set and lightly golden. Cool on a wire rack, then chill in the fridge for at least 4 hours.
- Prepare the glaze by mixing confectioners’ sugar and milk to a drizzle consistency, then drizzle over the chilled cheesecake before serving.
Notes
Use high-quality cream cheese for the best flavor. Consider making the cheesecake a day in advance for improved flavor.
