Ingredients

- 4 cups mixed leafy greens (arugula, spinach, romaine)
- 1–2 sliced apples (Honeycrisp or Granny Smith)
- ½ cup walnuts or pecans (toasted)
- ½ cup crumbled feta cheese (or goat cheese)
- 3 tablespoons apple cider vinegar
- ⅓ cup olive oil (extra-virgin)
- 1 tablespoon honey
- Salt & pepper to taste
Instructions
- In a small bowl, whisk together the apple cider vinegar, olive oil, honey, and a pinch of salt and pepper.
- In a large salad bowl, combine the mixed greens, sliced apples, toasted walnuts or pecans, and crumbled feta cheese.
- Drizzle the vinaigrette over the salad just before serving and toss gently to coat.
- Serve immediately on individual bowls or a large platter for a beautiful presentation.
Notes
Make the vinaigrette ahead of time and store in the fridge for up to a week. Store leftover components separately to maintain freshness.
