Description

A fresh and vibrant salad featuring mixed greens, crunchy walnuts, and a tangy apple cider vinaigrette.


Ingredients

  • 4 cups mixed leafy greens (arugula, spinach, romaine)
  • 12 sliced apples (Honeycrisp or Granny Smith)
  • ½ cup walnuts or pecans (toasted)
  • ½ cup crumbled feta cheese (or goat cheese)
  • 3 tablespoons apple cider vinegar
  • ⅓ cup olive oil (extra-virgin)
  • 1 tablespoon honey
  • Salt & pepper to taste

Instructions

  1. In a small bowl, whisk together the apple cider vinegar, olive oil, honey, and a pinch of salt and pepper.
  2. In a large salad bowl, combine the mixed greens, sliced apples, toasted walnuts or pecans, and crumbled feta cheese.
  3. Drizzle the vinaigrette over the salad just before serving and toss gently to coat.
  4. Serve immediately on individual bowls or a large platter for a beautiful presentation.

Notes

Make the vinaigrette ahead of time and store in the fridge for up to a week. Store leftover components separately to maintain freshness.
