Description

A delightful twist on the classic fall treat, Apple Cider Donut Bread combines warm spices and the richness of apple cider for a heartwarming loaf.


Ingredients

  • 1 cup apple cider
  • 1/2 cup unsalted butter, at room temperature
  • 1 cup light brown sugar, packed
  • 2 teaspoons vanilla extract
  • 2 large eggs, at room temperature
  • 1/4 cup unsweetened applesauce
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/3 cup granulated sugar (for topping)
  • 1 tablespoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a standard-size 1-lb loaf pan with parchment paper.
  2. Pour the apple cider into a saucepan over medium heat and cook until it reduces to about 1/2 cup. Let cool.
  3. In a stand mixer, cream the butter and light brown sugar on high speed until light and fluffy, about 3 minutes.
  4. Add vanilla extract and eggs, one at a time, beating well after each addition.
  5. In a separate bowl, mix together the applesauce and reduced apple cider until combined.
  6. In another bowl, whisk together flour, baking powder, baking soda, salt, and spices.
  7. Mix the dry and wet ingredients into the butter mixture alternately, starting and ending with dry ingredients until just combined.
  8. Spoon the batter into the prepared loaf pan and spread evenly.
  9. In a small bowl, mix granulated sugar and cinnamon for the topping, then sprinkle it over the loaf.
  10. Bake for 40 to 45 minutes, until the loaf springs back to the touch and a knife inserted comes out mostly clean.
  11. Cool in the pan for about 10 minutes, then remove and let cool completely before slicing.

Notes

To avoid dry bread, do not overmix the batter and monitor the baking time closely.
