- 1 cup apple cider
- 1/2 cup unsalted butter, room temperature
- 3/4 cup light brown sugar, packed
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons apple pie spice
- 1 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1/4 cup granulated sugar (for coating)
- 1 teaspoon apple pie spice (for coating)
- 1 cup confectioners’ sugar (for glaze)
- 2 to 3 tablespoons apple cider (for glaze)
Instructions
- Reduce the cider in a saucepan over medium heat for about 20 minutes until it reduces to 1/4 cup. Set aside to cool.
- Mix the butter and brown sugar on medium speed until light and fluffy. Add the egg, vanilla extract, and cooled apple cider; mix well.
- Combine the flour, apple pie spice, baking soda, and salt in a separate bowl. Gradually mix into the wet ingredients until just combined.
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Prepare the coating by mixing granulated sugar and apple pie spice.
- Shape the dough into balls and roll in the sugar mixture, placing them on the baking sheet.
- Bake for 8-10 minutes until edges are set and lightly browned. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Glaze by mixing confectioners’ sugar with apple cider to desired consistency and drizzle over cooled cookies.
