Description

Ingredients

  • 2 packages cream cheese, softened
  • 3/4 cup superfine granulated sugar
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 tablespoons apple cider reduction
  • 1 cup granulated sugar (for caramel)
  • 6 tablespoons unsalted butter (for caramel)
  • 1/3 cup heavy cream, warmed (for caramel)
  • 1/4 cup reduced apple cider (for caramel)
  • 1/2 teaspoon vanilla extract (for caramel)
  • 1 pinch kosher salt (for caramel)
  • Sliced apples (optional topping)

Instructions

  1. Reduce the cider: In a saucepan, combine apple cider and cinnamon, and cook until reduced.
  2. Preheat oven to 350°F (175°C) and prepare the springform pan.
  3. Prepare the crust: Mix graham cracker crumbs, sugar, and butter until combined and press into the pan.
  4. Mix the filling: Blend softened cream cheese and sugar, then add cooled cider reduction and other ingredients.
  5. Bake the cheesecake in a water bath until set but slightly jiggly in the center.
  6. Make the caramel by melting sugar and combining with butter, cream, and apple cider.
  7. Serve by drizzling caramel on the cheesecake and add sliced apples if desired.

Notes

For best results, ensure all dairy ingredients are at room temperature. You can use digestive biscuits instead of graham crackers for a different flavor.
