A moist and flavorful Apple Cider Cake layered with luscious salted caramel buttercream, perfect for fall gatherings.

- 1 cup unsalted butter, softened
- 1 ⅓ cups brown sugar, lightly packed
- 4 large eggs
- 2 teaspoons pure vanilla extract
- 3 cups all-purpose flour
- 4 teaspoons baking powder
- 1 ¼ teaspoons salt
- 2 teaspoons cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon ground clove
- 1 ½ cups fresh apple cider
- 1 tablespoon unsalted butter
- 1 apple, peeled and thinly sliced
- ⅛ teaspoon cinnamon (for dusting apples)
- 1 ½ cups unsalted butter (for frosting), softened
- 4 ounces cream cheese, softened
- 3 cups confectioners sugar
- ¾ cup salted caramel sauce
- 1 cup walnuts, chopped (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease/flour two 9-inch round cake pans.
- Cream together butter and brown sugar until light and fluffy. Add eggs one at a time and mix well before adding vanilla.
- In a separate bowl, combine flour, baking powder, salt, cinnamon, nutmeg, and ground clove. Gradually add to the wet mixture, alternating with apple cider, until just combined.
- In a saucepan, melt unsalted butter over medium heat and sauté sliced apple with ⅛ teaspoon cinnamon until tender, then fold into the batter.
- Divide the batter between the prepared pans and bake for 30-35 minutes. Let cool for 10 minutes, then transfer to a wire rack.
- For frosting, beat together butter and cream cheese until smooth. Gradually add confectioners sugar and salted caramel until fluffy.
- Once cooled, layer the cakes with buttercream in between. Frost the top and sides with the remaining buttercream and decorate as desired.

Notes
Use high-quality apple cider and caramel for best flavor. Store leftovers in an airtight container at room temperature for 2 days, in the fridge for up to a week, or freeze for up to 3 months.
