Description

Ingredients

  • 1 cup unsalted butter, softened
  • 1 ⅓ cups brown sugar, lightly packed
  • 4 large eggs
  • 2 teaspoons pure vanilla extract
  • 3 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 ¼ teaspoons salt
  • 2 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon ground clove
  • 1 ½ cups fresh apple cider
  • 1 tablespoon unsalted butter
  • 1 apple, peeled and thinly sliced
  • ⅛ teaspoon cinnamon (for dusting apples)
  • 1 ½ cups unsalted butter (for frosting), softened
  • 4 ounces cream cheese, softened
  • 3 cups confectioners sugar
  • ¾ cup salted caramel sauce
  • 1 cup walnuts, chopped (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease/flour two 9-inch round cake pans.
  2. Cream together butter and brown sugar until light and fluffy. Add eggs one at a time and mix well before adding vanilla.
  3. In a separate bowl, combine flour, baking powder, salt, cinnamon, nutmeg, and ground clove. Gradually add to the wet mixture, alternating with apple cider, until just combined.
  4. In a saucepan, melt unsalted butter over medium heat and sauté sliced apple with ⅛ teaspoon cinnamon until tender, then fold into the batter.
  5. Divide the batter between the prepared pans and bake for 30-35 minutes. Let cool for 10 minutes, then transfer to a wire rack.
  6. For frosting, beat together butter and cream cheese until smooth. Gradually add confectioners sugar and salted caramel until fluffy.
  7. Once cooled, layer the cakes with buttercream in between. Frost the top and sides with the remaining buttercream and decorate as desired.
  8. Serve and enjoy!

Notes

Use high-quality apple cider and caramel for best flavor. Store leftovers in an airtight container at room temperature for 2 days, in the fridge for up to a week, or freeze for up to 3 months.
