- 2 cups apple cider
- 1 cup unsalted butter, melted
- 1 3/4 cups light brown sugar, lightly packed
- 2 large eggs, room temperature
- 1 large egg yolk, room temperature
- 1 1/2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 2 teaspoons cornstarch
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- 1/3 cup granulated sugar, for topping
- 1 teaspoon ground apple pie spice
Instructions
- Reduce the cider: In a small saucepan over medium heat, combine the apple cider. Cook for 20-22 minutes, stirring occasionally, until it reduces down to about 1/4 cup. Let it cool slightly while you prepare the batter.
- Preheat the oven: Preheat your oven to 350°F (175°C). Line a 9×9-inch baking dish with parchment paper, leaving a bit of an overhang for easy removal later.
- Mix the wet ingredients: In a large bowl, whisk together the melted butter and brown sugar until fully incorporated. Gradually add the eggs and egg yolk, whisking well after each addition. Then stir in the vanilla extract and reduced apple cider.
- Combine the dry ingredients: In a separate medium-sized bowl, whisk together the flour, cornstarch, baking powder, and salt.
- Combine mixtures: Gently fold the dry mixture into the wet mixture until just combined—be careful not to overmix!
- Prepare the batter: Pour the blondie batter into the prepared baking dish and spread it evenly.
- Make topping: In a small bowl, combine the granulated sugar and apple pie spice. Mix it well and then sprinkle this mixture evenly over the batter.
- Bake: Place the baking dish in the oven and bake for 35-38 minutes, or until the edges turn golden brown and the center is set (no longer jiggly).
- Cool & enjoy: Let the blondies cool completely in the pan on a wire rack before lifting them out using the parchment overhang. Cut into squares and enjoy!
