  • 2 cups (240 g) all-purpose flour
  • 1 cup (200 g) brown sugar, packed
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup (120 ml) milk
  • 1/2 cup (115 g) unsalted butter, melted and slightly cooled
  • 1 1/2 cups diced apples (about 2 medium apples)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, brown sugar, baking powder, cinnamon, and salt.
  3. In a separate bowl, beat the eggs and whisk in the milk and melted butter until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the diced apples.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake for 18-22 minutes or until golden brown and a toothpick comes out clean.
  8. Cool for 5 minutes in the tin, then transfer to a wire rack. Serve warm or at room temperature.

Notes

For a delightful crunch, sprinkle coarse sugar on top before baking. Store in an airtight container for up to 3 days.
