- 2 cups (240 g) all-purpose flour
- 1 cup (200 g) brown sugar, packed
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup (120 ml) milk
- 1/2 cup (115 g) unsalted butter, melted and slightly cooled
- 1 1/2 cups diced apples (about 2 medium apples)
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, brown sugar, baking powder, cinnamon, and salt.
- In a separate bowl, beat the eggs and whisk in the milk and melted butter until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the diced apples.
- Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 18-22 minutes or until golden brown and a toothpick comes out clean.
- Cool for 5 minutes in the tin, then transfer to a wire rack. Serve warm or at room temperature.
Notes
For a delightful crunch, sprinkle coarse sugar on top before baking. Store in an airtight container for up to 3 days.
