Homemade Amish caramels, rich in buttery flavor and perfect for any occasion.
Ingredients

- 1 cup granulated sugar
- 3/4 cup corn syrup
- 1/2 cup unsalted butter
- 1 cup heavy cream
- 1/2 teaspoon vanilla extract
Instructions
- Grease an 8×8 inch baking pan with non-stick spray or line it with parchment paper.
- In a medium saucepan over medium-high heat, combine granulated sugar, corn syrup, unsalted butter, and 1/4 cup of heavy cream. Stir until boiling.
- Gradually stir in the remaining 3/4 cup of heavy cream carefully.
- Cook until mixture reaches 240°F (soft-ball stage) while stirring continuously.
- Remove from heat and stir in vanilla extract.
- Pour the caramel into the prepared pan and allow it to cool for at least 8 hours or overnight.
- Once cool, cut into bite-sized pieces and wrap in wax paper if desired.
Notes
Store caramels in an airtight container at room temperature for up to two weeks.
