- 1 cup powdered sugar (100g)
- 3 eggs (2 whole + 1 yolk)
- ½ tsp vanilla
- ¾ cup all-purpose flour (100g)
- 1 ½ cups cornstarch (200g)
- ½ tsp baking powder
- ½ tsp salt
- ¾ cup dulce de leche (250g)
Instructions
- Combine the softened butter and powdered sugar in a large bowl with an electric hand mixer for about 2 minutes until light and fluffy.
- Add the vanilla and the 2 whole eggs plus 1 yolk, mixing until well blended.
- Gradually add the all-purpose flour, cornstarch, baking powder, and salt, folding until a cohesive dough forms.
- Wrap the dough tightly in plastic wrap and refrigerate for one hour.
- Preheat your oven to 325°F (165°C).
- Roll out the chilled dough to ¼ inch thick and cut into 2-inch circles.
- Place them on an unlined, ungreased cookie sheet and chill for 5 more minutes.
- Bake in the preheated oven for 7-8 minutes until lightly browned.
- Fill each cooled cookie with a generous spoonful of dulce de leche to create sandwiches.
Notes
For a richer flavor, use high-quality European butter. Store the cookies in an airtight container for up to one week.
