Description

Crispy, golden zucchini chips made healthier in the air fryer – a perfect low-carb snack or side dish that’s irresistibly crunchy.


Ingredients

  • 4 medium zucchini
  • 1 tbsp salt (adjust to taste)
  • 1 tsp garlic powder
  • 1 tsp cooking spray oil

Instructions

  1. Slice zucchini into 1/4-inch rounds using mandoline or sharp knife.
  2. Pat slices dry thoroughly with paper towels.
  3. In bowl, mix Parmesan, panko, garlic powder, paprika, salt and pepper.
  4. Toss zucchini with olive oil, then coat in breadcrumb mixture.
  5. Preheat air fryer to 375°F (190°C) for 3 minutes.
  6. Arrange zucchini in single layer in basket (work in batches if needed). Lightly spray with cooking spray.
  7. Air fry 8-10 minutes, flipping halfway, until golden and crisp.
  8. Let cool 2 minutes (they crisp up more as they cool). Serve immediately.

Notes

  • For extra crispiness: leave salted zucchini slices on rack for 30 minutes before coating
  • Gluten-free option: use almond flour instead of panko
  • Best eaten fresh but can be reheated in air fryer for 2 minutes
  • Try with ranch dressing or marinara sauce for dipping
