Description
Crispy, golden zucchini chips made healthier in the air fryer – a perfect low-carb snack or side dish that’s irresistibly crunchy.
Ingredients
- 4 medium zucchini
- 1 tbsp salt (adjust to taste)
- 1 tsp garlic powder
- 1 tsp cooking spray oil
Instructions
- Slice zucchini into 1/4-inch rounds using mandoline or sharp knife.
- Pat slices dry thoroughly with paper towels.
- In bowl, mix Parmesan, panko, garlic powder, paprika, salt and pepper.
- Toss zucchini with olive oil, then coat in breadcrumb mixture.
- Preheat air fryer to 375°F (190°C) for 3 minutes.
- Arrange zucchini in single layer in basket (work in batches if needed). Lightly spray with cooking spray.
- Air fry 8-10 minutes, flipping halfway, until golden and crisp.
- Let cool 2 minutes (they crisp up more as they cool). Serve immediately.
Notes
- For extra crispiness: leave salted zucchini slices on rack for 30 minutes before coating
- Gluten-free option: use almond flour instead of panko
- Best eaten fresh but can be reheated in air fryer for 2 minutes
- Try with ranch dressing or marinara sauce for dipping
