Instructions

  1. Prep chicken: Cut chicken into even 1.5-inch thick pieces. Pound thicker parts to even thickness if needed.
  2. Make marinade: Whisk olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, pepper, and lemon zest.
  3. Marinate: Coat chicken thoroughly with marinade. Let sit 15 minutes at room temperature (or up to 4 hours refrigerated).
  4. Air fry: Preheat air fryer to 375°F (190°C). Arrange chicken in single layer (cook in batches if needed). Air fry 12-14 minutes, flipping halfway, until internal temperature reaches 165°F (74°C).
  5. Crisp: Increase heat to 400°F (200°C) for final 2 minutes for extra browning.
  6. Serve: Garnish with parsley and lemon wedges. Serve with tzatziki and pita.
