Ingredients

  • 1 medium eggplant, sliced into ½-inch thick rounds
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 1 cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning

Instructions

  1. Preheat the Air Fryer to 375°F (190°C).
  2. Slice the eggplant into ½-inch thick rounds and pat them dry with paper towels.
