Description

A delightful blend of roasted peanuts, coconut milk, and coffee, coated in a sweet syrup that creates a perfectly crunchy snack.


Ingredients

Scale
  • 200 g raw skin-on peanuts
  • 160 g sugar
  • 2 tsp Ovaltine powder (or cocoa powder)
  • 1/21 tsp instant coffee granules
  • 1/4 cup coconut milk
  • 1/3 cup water
  • 1/2 tsp fine grain salt
  • 2 Tbsp white sesame seeds, toasted

Instructions

  1. Prepare the peanuts by removing any damaged ones and rinsing if necessary.
  2. Toast the sesame seeds in a pan until golden.
  3. Line a baking sheet with parchment paper.
  4. Combine the sugar, water, coconut milk, Ovaltine, and coffee in a pot and heat until sugar dissolves.
  5. Simmer and cook the mixture with peanuts for about 10 minutes.
  6. Stir constantly until the syrup thickens and coats the peanuts.
  7. Add the fine salt and mix well.
  8. Incorporate toasted sesame seeds and coat evenly.
  9. Transfer the peanuts to the baking sheet to cool.
  10. Cool for at least 30 minutes before storing.

Notes

Store in an airtight container at room temperature for up to 3 weeks.
