Description

A cozy autumn treat made with acorn squash, bursting with warm spices and sweetness, perfect for breakfast or dessert.


Ingredients

  • 1 cup acorn squash (mashed or pureed)
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ¼ cup vegetable oil
  • 2 tablespoons butter (melted)
  • ½ teaspoon vanilla extract
  • 2 large eggs
  • 1 ½ cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon nutmeg
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon kosher salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour your bread pan or line it with parchment paper.
  3. In a medium bowl, blend acorn squash, granulated sugar, vegetable oil, melted butter, and eggs until smooth.
  4. In another bowl, sift together flour, cinnamon, cloves, nutmeg, baking soda, baking powder, and salt.
  5. Slowly combine the dry ingredients with the wet mixture, mixing gently until just combined.
  6. Pour the batter into the prepared pan and sprinkle the top with sugar.
  7. Bake for 45-55 minutes, until a toothpick comes out clean.
  8. Let it cool for 10 minutes in the pan before transferring to a wire rack to cool completely.

Notes

Store at room temperature for 3 days or refrigerate for up to a week. Can be frozen for up to 3 months.
