- 1 cup acorn squash (mashed or pureed)
- 1 cup granulated sugar
- ½ cup brown sugar
- ¼ cup vegetable oil
- 2 tablespoons butter (melted)
- ½ teaspoon vanilla extract
- 2 large eggs
- 1 ½ cups all-purpose flour
- 1 teaspoon ground cinnamon
- ½ teaspoon ground cloves
- ½ teaspoon nutmeg
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon kosher salt
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour your bread pan or line it with parchment paper.
- In a medium bowl, blend acorn squash, granulated sugar, vegetable oil, melted butter, and eggs until smooth.
- In another bowl, sift together flour, cinnamon, cloves, nutmeg, baking soda, baking powder, and salt.
- Slowly combine the dry ingredients with the wet mixture, mixing gently until just combined.
- Pour the batter into the prepared pan and sprinkle the top with sugar.
- Bake for 45-55 minutes, until a toothpick comes out clean.
- Let it cool for 10 minutes in the pan before transferring to a wire rack to cool completely.
Notes
Store at room temperature for 3 days or refrigerate for up to a week. Can be frozen for up to 3 months.
