- ½ cup 7UP soda (or similar lemon-lime soda)
- 2 tsp vanilla extract
- 1 tsp lemon extract (optional)
- For the Glaze (Optional):
- 1 cup powdered sugar
- 2–3 tbsp 7UP soda
- 1 tsp lemon zest
Instructions
- Preheat Oven: Preheat oven to 325°F (165°C). Grease and flour a 10-12 cup Bundt pan.

- Add Eggs: Beat in eggs one at a time, mixing well after each addition.
- Add Dry Ingredients: Gradually mix in flour until just combined.
- Add 7UP & Extracts: Stir in 7UP, vanilla, and lemon extract (if using). Batter will be thick.
- Bake: Pour batter into prepared pan. Bake for 60-75 mins, or until a toothpick comes out clean.

- Glaze (Optional): Whisk powdered sugar, 7UP, and lemon zest until smooth. Drizzle over cooled cake.
Notes
- For extra citrus flavor, add 1 tbsp lemon juice to the batter.
- Do not overmix—this keeps the cake tender.

- Substitute Sprite or Sierra Mist if 7UP is unavailable.
