3 cups all-purpose flour
3 cups granulated sugar
1½ cups (3 sticks) unsalted butter, softened
5 large eggs
½ cup 7UP soda (or similar lemon-lime soda)
2 tsp vanilla extract
1 tsp lemon extract (optional)
For the Glaze (Optional):
1 cup powdered sugar
2–3 tbsp 7UP soda
1 tsp lemon zest
Instructions
Preheat Oven: Preheat oven to 325°F (165°C). Grease and flour a 10-12 cup Bundt pan.
Cream Butter & Sugar: In a large bowl, beat butter and sugar until light and fluffy (about 3-5 mins).
Add Eggs: Beat in eggs one at a time, mixing well after each addition.
Add Dry Ingredients: Gradually mix in flour until just combined.
Add 7UP & Extracts: Stir in 7UP, vanilla, and lemon extract (if using). Batter will be thick.
Bake: Pour batter into prepared pan. Bake for 60-75 mins, or until a toothpick comes out clean.
Cool: Let cool in pan for 15 mins, then invert onto a wire rack to cool completely.
Glaze (Optional): Whisk powdered sugar, 7UP, and lemon zest until smooth. Drizzle over cooled cake.
Notes
For extra citrus flavor, add 1 tbsp lemon juice to the batter.
Do not overmix—this keeps the cake tender.
