Instructions

  1. Preheat Oven: Preheat oven to 325°F (165°C). Grease and flour a 10-12 cup Bundt pan.
  2. Cream Butter & Sugar: In a large bowl, beat butter and sugar until light and fluffy (about 3-5 mins).
  3. Add Eggs: Beat in eggs one at a time, mixing well after each addition.
  4. Add Dry Ingredients: Gradually mix in flour until just combined.
  5. Add 7UP & Extracts: Stir in 7UP, vanilla, and lemon extract (if using). Batter will be thick.
  6. Bake: Pour batter into prepared pan. Bake for 60-75 mins, or until a toothpick comes out clean.
  7. Cool: Let cool in pan for 15 mins, then invert onto a wire rack to cool completely.
  8. Glaze (Optional): Whisk powdered sugar, 7UP, and lemon zest until smooth. Drizzle over cooled cake.
