- 1 lb shrimp, peeled and deveined
- 1 cup rice (white or brown)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 tablespoons fajita seasoning
- 2 tablespoons olive oil
- 1 lime, juiced
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- Cook the rice according to the package instructions until fluffy and tender.
- Heat a large cast iron skillet, add olive oil and allow it to shimmer.
- Sauté the sliced onion and bell peppers for about 5 minutes until softened and caramelized.
- Add the shrimp along with fajita seasoning. Cook until shrimp is pink and opaque, about 3-4 minutes.
- Finish with lime juice and season with salt and pepper. Stir to combine.
- Serve the shrimp and vegetable mixture over cooked rice and garnish with fresh cilantro.
Notes
For a healthier option, add black beans or substitute rice with cauliflower rice.
