- 1 cup Cottage Cheese (or Greek yogurt)
- 2 large Eggs (or a flax egg for vegan)
- 1/3 cup Maple Syrup (or honey)
- 1 teaspoon Vanilla Extract
- 1 tablespoon Orange Zest
- 2 cups Old-Fashioned Rolled Oats
- 1 teaspoon Cinnamon
- 1 teaspoon Baking Powder
- 2 cups Diced Apples
- 1 cup Cranberries
Instructions
- Preheat your oven to 350°F (175°C).
- Lightly grease an 8×8 inch baking dish.
- In a large bowl, whisk together the cottage cheese, eggs, maple syrup, vanilla extract, and orange zest until smooth.
- In another bowl, mix the rolled oats, cinnamon, and baking powder.
- Gradually stir the dry ingredients into the wet mixture until just combined. Fold in apples and cranberries gently.
- Pour the mixture into the prepared baking dish and bake for 30-35 minutes until golden brown.
- Allow to cool slightly before cutting into squares and serve warm.
Notes
Leftovers can be stored in an airtight container in the fridge for 3-4 days. Serve with coffee or tea for a cozy experience.
