- 1 pound dried white beans (navy or cannellini), soaked overnight
- 1 pound ham hock or diced ham
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups chicken broth
- 2 cups water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon thyme
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup melted butter
- 1 egg
Instructions
- Rinse the soaked beans and drain well.
- In a large pot, combine beans, ham hock or diced ham, onion, garlic, chicken broth, water, salt, black pepper, and thyme. Bring to a boil, then reduce heat to simmer. Cook uncovered for 90-120 minutes until beans are tender.
- If using a ham hock, remove it after cooking, shred the meat, and return to the pot.
- Preheat your oven to 400°F (200°C) and grease an 8×8-inch baking pan.
- In a bowl, whisk together cornmeal, flour, sugar, baking powder, and salt. In another bowl, combine milk, melted butter, and egg. Mix wet into dry just until combined.
- Pour batter into the prepared pan and bake for 20-25 minutes until golden and a toothpick comes out clean.
- Serve white beans in bowls with a slice of warm cornbread on the side.
Notes
For added flavor, consider using fresh herbs or spices. This dish tastes even better the next day.
