Description

A comforting dish of creamy white beans simmered with savory ham, served alongside fluffy cornbread.


Ingredients

  • 1 pound dried white beans (navy or cannellini), soaked overnight
  • 1 pound ham hock or diced ham
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups chicken broth
  • 2 cups water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup melted butter
  • 1 egg

Instructions

  1. Rinse the soaked beans and drain well.
  2. In a large pot, combine beans, ham hock or diced ham, onion, garlic, chicken broth, water, salt, black pepper, and thyme. Bring to a boil, then reduce heat to simmer. Cook uncovered for 90-120 minutes until beans are tender.
  3. If using a ham hock, remove it after cooking, shred the meat, and return to the pot.
  4. Preheat your oven to 400°F (200°C) and grease an 8×8-inch baking pan.
  5. In a bowl, whisk together cornmeal, flour, sugar, baking powder, and salt. In another bowl, combine milk, melted butter, and egg. Mix wet into dry just until combined.
  6. Pour batter into the prepared pan and bake for 20-25 minutes until golden and a toothpick comes out clean.
  7. Serve white beans in bowls with a slice of warm cornbread on the side.

Notes

For added flavor, consider using fresh herbs or spices. This dish tastes even better the next day.
