- 4 large sweet potatoes (about 2 ½ pounds), peeled and cut into 1/2-inch thick rounds
- 1 stick (1/2 cup) unsalted butter, room temperature
- 1 cup light brown sugar, packed
- 1/2 cup water
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 1 tsp vanilla extract
Instructions
- Peel and slice the sweet potatoes into 1/2-inch thick rounds.
- Melt the butter in a large nonstick skillet over medium heat.
- Stir in the brown sugar, water, cinnamon, nutmeg, and salt, cooking until the sugar is mostly dissolved and the mixture bubbles.
- Carefully add the sweet potato slices, spooning sauce over them. Cover and cook for about 20 minutes until fork tender.
- Remove the lid, stir in vanilla extract, and simmer uncovered for another 10-15 minutes to thicken the glaze.
- Transfer the sweet potatoes to a serving dish, pouring extra syrup over the top, and let sit for 5-10 minutes before serving.
Notes
For best results, use fresh sweet potatoes, and consider using coconut sugar or Stevia for alternatives. Leftovers can be stored for up to 4 days.
