  • 4 large sweet potatoes (about 2 ½ pounds), peeled and cut into 1/2-inch thick rounds
  • 1 stick (1/2 cup) unsalted butter, room temperature
  • 1 cup light brown sugar, packed
  • 1/2 cup water
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Peel and slice the sweet potatoes into 1/2-inch thick rounds.
  2. Melt the butter in a large nonstick skillet over medium heat.
  3. Stir in the brown sugar, water, cinnamon, nutmeg, and salt, cooking until the sugar is mostly dissolved and the mixture bubbles.
  4. Carefully add the sweet potato slices, spooning sauce over them. Cover and cook for about 20 minutes until fork tender.
  5. Remove the lid, stir in vanilla extract, and simmer uncovered for another 10-15 minutes to thicken the glaze.
  6. Transfer the sweet potatoes to a serving dish, pouring extra syrup over the top, and let sit for 5-10 minutes before serving.

Notes

For best results, use fresh sweet potatoes, and consider using coconut sugar or Stevia for alternatives. Leftovers can be stored for up to 4 days.
