Ingredients

Scale
  • 3 tbsp unsalted butter
  • 10 oz (about 40) regular marshmallows
  • 1 tsp vanilla extract
  • 6 cups (180g) Golden Grahams cereal
  • 2 cups (120g) mini marshmallows, divided
  • 1 cup (170g) milk chocolate chips or chopped chocolate bar
  • 1/4 cup (30g) crushed graham crackers
  • Pinch of salt

Instructions

  1. Prep: Line a 9×13-inch pan with parchment paper, leaving overhang on sides. Grease lightly.
  2. Melt: In large pot over low heat, melt butter. Add large marshmallows and stir constantly until completely melted. Remove from heat and stir in vanilla.
  3. Mix: Immediately add Golden Grahams cereal, 1 cup mini marshmallows, chocolate chips, and salt. Gently fold until evenly coated.
  4. Press: Transfer mixture to prepared pan. Using greased hands or spatula, press firmly into even layer.
  5. Top: Sprinkle remaining 1 cup mini marshmallows over top. Let sit 2 minutes, then gently press to adhere.
  6. Toast: Broil for 1-2 minutes until marshmallows are golden (watch carefully!). Sprinkle with crushed graham crackers.
  7. Set: Cool completely at room temperature (about 2 hours) before lifting out and cutting into squares.

Notes

  • For extra chocolatey version: drizzle melted chocolate over cooled bars
  • Store in airtight container at room temperature for up to 5 days
  • Can use regular Rice Krispies + 1 cup graham cracker crumbs instead of Golden Grahams
  • For cleaner cuts, chill 30 minutes before slicing with greased knife
  • Double the recipe for a thicker, more indulgent treat
