Smoky Jalapeño Popper Meatloaf

Description

A spicy twist on classic meatloaf, packed with creamy cheese, smoky bacon, and spicy jalapeños for a bold flavor explosion that’s sure to impress.


Ingredients

1 lb Ground Beef

1/2 cup Breadcrumbs

1/4 cup Chopped Jalapeños

1/4 cup Shredded Cheddar Cheese

1/4 cup Cream Cheese (Softened)

1 large Egg

1 tsp Garlic Powder

1/2 tsp Smoked Paprika

Salt and Pepper (to taste)

1/2 cup Ranch Dressing (For drizzle)


Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheet with foil and place rack on top.
  2. In large bowl, mix beef, pork, breadcrumbs, eggs, milk, onion, 2/3 of jalapeños, Worcestershire, and seasonings.
  3. In separate bowl, combine cream cheese and cheddar. Form meat mixture into loaf shape on rack.
  4. Create deep center channel. Pipe cheese mixture into channel, then seal meat over top.
  5. Weave bacon slices over top. Brush with barbecue sauce and sprinkle reserved jalapeños.
  6. Bake 50-60 minutes until internal temperature reaches 160°F (71°C). Rest 10 minutes before slicing.

Notes

  • Wear gloves when handling jalapeños
  • For extra smoke, add 1/2 tsp liquid smoke to meat mixture
  • Leftovers make incredible sandwiches
  • Can substitute ground turkey, but add 1 tbsp olive oil
