Description
A spicy twist on classic meatloaf, packed with creamy cheese, smoky bacon, and spicy jalapeños for a bold flavor explosion that’s sure to impress.
Ingredients
1 lb Ground Beef
1/2 cup Breadcrumbs
1/4 cup Chopped Jalapeños
1/4 cup Shredded Cheddar Cheese
1/4 cup Cream Cheese (Softened)
1 large Egg
1 tsp Garlic Powder
1/2 tsp Smoked Paprika
Salt and Pepper (to taste)
1/2 cup Ranch Dressing (For drizzle)
Instructions
- Preheat oven to 375°F (190°C). Line baking sheet with foil and place rack on top.
- In large bowl, mix beef, pork, breadcrumbs, eggs, milk, onion, 2/3 of jalapeños, Worcestershire, and seasonings.
- In separate bowl, combine cream cheese and cheddar. Form meat mixture into loaf shape on rack.
- Create deep center channel. Pipe cheese mixture into channel, then seal meat over top.
- Weave bacon slices over top. Brush with barbecue sauce and sprinkle reserved jalapeños.
- Bake 50-60 minutes until internal temperature reaches 160°F (71°C). Rest 10 minutes before slicing.
Notes
- Wear gloves when handling jalapeños
- For extra smoke, add 1/2 tsp liquid smoke to meat mixture
- Leftovers make incredible sandwiches
- Can substitute ground turkey, but add 1 tbsp olive oil
