- 1 pound ground chicken
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup cherry tomatoes, halved
- 1 package (16 ounces) gnocchi
- Fresh basil for garnish
Instructions
- In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until just combined and form into meatballs, about 1-1.5 inches in diameter.
- Place the formed meatballs in a single layer in the slow cooker.
- In a separate bowl, whisk together the heavy cream and chicken broth until smooth. Pour this mixture evenly over the meatballs.
- Scatter the halved cherry tomatoes on top of the meatballs.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, add the gnocchi to the slow cooker and stir gently.
- Serve the meatballs over a bed of gnocchi, garnished with fresh basil.
Notes
For best results, use room temperature ingredients and adjust seasoning to taste. Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months.
