Description

Cozy and comforting Tuscan chicken meatballs simmered in a rich, creamy sauce, perfect for family dinners and gatherings.


Ingredients

  • 1 pound ground chicken
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 package (16 ounces) gnocchi
  • Fresh basil for garnish

Instructions

  1. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until just combined and form into meatballs, about 1-1.5 inches in diameter.
  2. Place the formed meatballs in a single layer in the slow cooker.
  3. In a separate bowl, whisk together the heavy cream and chicken broth until smooth. Pour this mixture evenly over the meatballs.
  4. Scatter the halved cherry tomatoes on top of the meatballs.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. About 30 minutes before serving, add the gnocchi to the slow cooker and stir gently.
  7. Serve the meatballs over a bed of gnocchi, garnished with fresh basil.

Notes

For best results, use room temperature ingredients and adjust seasoning to taste. Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months.
