Description
A whole chicken cooked slowly in the crockpot until tender and juicy, with a flavorful herb and spice rub that mimics rotisserie-style chicken. Easy to prepare and perfect for meals throughout the week.

- 1 (6 lb) whole chicken
- 1 1/2 tsp paprika
- 1 1/2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp celery seed
- 1/4 tsp turmeric (optional)
- Salt and freshly ground black pepper
Instructions
- In a small bowl, mix together paprika, garlic powder, onion powder, thyme, oregano, salt, and pepper.
- Pat the chicken dry with paper towels. Rub the chicken all over with olive oil, then rub with the spice mixture, including under the skin and inside the cavity.
- Place the onion, garlic, and lemon halves inside the chicken cavity.
- Pour chicken broth or water into the bottom of the slow cooker.
- Place the chicken in the slow cooker, breast side up.
- Cover and cook on low for 6-7 hours or on high for 4-5 hours, until the internal temperature reaches 165°F in the thickest part of the thigh.
- For crispier skin, transfer the chicken to a baking sheet and broil for 3-5 minutes after slow cooking.
- Let rest for 10 minutes before carving.
Notes
- For best results, avoid opening the slow cooker during cooking to maintain temperature.
- If desired, add vegetables like carrots and potatoes to the slow cooker around the chicken.
- Leftover chicken can be stored in an airtight container in the refrigerator for up to 4 days.
- Use the cooking liquid as a base for gravy or soup.
