Description

Ingredients

  • 2 large eggs
  • 1 large flour tortilla (10-inch)
  • 1/2 ripe avocado
  • 1 tablespoon milk or cream
  • 1 teaspoon unsalted butter or olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Optional: garlic powder, onion powder, hot sauce

Instructions

  1. Mash avocado in bowl and season with salt and pepper.
  2. Whisk eggs with milk, salt, pepper, and optional seasonings.
  3. Heat butter/oil in skillet over medium-low heat.
  4. Cook eggs, gently pushing to center until set but moist (3-4 minutes).
  5. Warm tortilla in microwave or skillet until pliable.
  6. Spread avocado down center of tortilla, top with scrambled eggs.
  7. Fold bottom over filling, tuck sides, and roll tightly.
