Description
A fun, boozy twist on pumpkin pie! These creamy pumpkin Jello shots are spiked with vodka and spiced with cinnamon and nutmeg for a festive fall treat.

- 2 packages refrigerated premade pie crust: I love using Pillsbury; they are easy to work with and bake perfectly!
- ½ oz. Unflavored gelatin powder: (use 2 packets, ¼ oz. each) – Knox is a reliable brand in my kitchen.
- 1¼ cup water: divided for the jello mixture.
- ⅓ cup spiced pumpkin pie filling: You can use pure canned pumpkin mixed with 1½ tsp pumpkin pie spice instead.
- ½ cup white rum (or vodka) – This adds a beautiful smoothness.
- ¼ cup granulated sugar: adjust to taste!
- ½ tbsp whipping cream (heavy cream): do not substitute; it gives the right richness.
- Whipped cream (or whipped topping, optional garnish): for that classic pie touch!
Instructions
- In a saucepan, whisk pumpkin puree, milk, brown sugar, and pumpkin pie spice over low heat until smooth (do not boil).
- Sprinkle gelatin over the mixture and whisk until fully dissolved (2-3 mins). Remove from heat.
- Stir in vodka and Irish cream until combined. Pour into shot glasses or small cups.
- Refrigerate for at least 4 hours (or overnight) until set.
- Top with whipped cream and a sprinkle of cinnamon before serving.
Notes
- For a stronger kick, increase vodka to 3/4 cup and reduce milk.
- Use mini mason jars or plastic shot cups for easy serving.
- Garnish with graham cracker crumbs for a ‘pie crust’ effect.
