- 1 pound pork tenderloin
- 1 cup fresh or frozen cranberries
- 1/2 cup brown sugar
- 1/2 cup chicken broth
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
Instructions
- Preheat oven to 400°F (200°C).
- Season pork tenderloin with salt, pepper, thyme, and garlic powder.
- Heat olive oil in skillet over medium-high heat and sear pork 3-4 minutes per side until browned.
- In saucepan, combine cranberries, brown sugar, and chicken broth. Cook 5-7 minutes until cranberries burst and sauce thickens.
- Place seared pork in baking dish and pour cranberry sauce over top.
- Roast 25-30 minutes until internal temperature reaches 145°F (63°C).
- Let rest 5 minutes before slicing.
- Serve with additional cranberry sauce.

- Sauce will thicken further as it cools.
- Store leftovers in airtight container in refrigerator for up to 3 days.
