  • 1.5 oz (45ml) vodka (optional, omit for mocktail)
  • 4 oz (120ml) ginger beer (chilled)
  • 45 fresh pineapple sage leaves (or regular sage + extra for garnish)
  • 1/2 oz (15ml) lime juice
  • 1/2 oz (15ml) simple syrup (adjust to taste)
  • Ice cubes
  • Pineapple slice or lime wheel (for garnish)

Instructions

  1. In a shaker, muddle pineapple sage leaves with lime juice and simple syrup to release flavors.
  2. Add pineapple juice, vodka (if using), and ice. Shake well for 10-15 seconds.
  3. Strain into a glass filled with fresh ice.
  4. Top with ginger beer and stir gently.
  5. Garnish with a pineapple slice, lime wheel, or a sage leaf. Serve immediately.

Notes

  • For a mocktail, replace vodka with extra pineapple juice or sparkling water.
  • If pineapple sage isn’t available, use regular sage + a small pineapple chunk when muddling.
  • Adjust sweetness with more/less simple syrup based on ginger beer’s intensity.
