Description

A flavorful and vibrant dish featuring tender peanut-glazed chicken paired with a refreshing spicy lime mango salad. Perfect for a tropical-inspired meal with a balance of sweet, savory, and spicy flavors.

Ingredients

Scale
  • For the Peanut Chicken:
  • 4 boneless, skinless chicken breasts
  • 1/4 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1 tsp sriracha (optional for heat)
  • 1 clove garlic, minced
  • 1 tsp ginger, grated
  • 2 tbsp vegetable oil
  • 2 tbsp chopped peanuts (for garnish)
  • For the Spicy Lime Mango Salad:
  • 2 ripe mangoes, diced
  • 1 red bell pepper, thinly sliced
  • 1/4 red onion, thinly sliced
  • 1 small cucumber, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced (optional)
  • Juice of 2 limes
  • 1 tbsp honey
  • 1/2 tsp salt
  • 1/4 tsp chili flakes

Instructions

  1. Marinate the Chicken: In a bowl, whisk together peanut butter, soy sauce, honey, lime juice, sriracha, garlic, and ginger. Coat chicken breasts evenly with the marinade and let sit for at least 15 minutes (or up to 2 hours for deeper flavor).
  2. Cook the Chicken: Heat oil in a skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side until golden and cooked through (internal temp 165°F). Remove and let rest for 5 minutes before slicing.
  3. Prepare the Salad: In a large bowl, combine mango, bell pepper, red onion, cucumber, cilantro, and jalapeño. In a small bowl, whisk lime juice, honey, salt, and chili flakes. Pour dressing over the salad and toss gently.
  4. Serve: Slice the chicken and serve over a bed of the spicy lime mango salad. Garnish with chopped peanuts and extra cilantro if desired.

Notes

  • For extra creaminess, thin the peanut sauce with a splash of coconut milk.
  • Adjust spice levels by adding more or less jalapeño/sriracha.
  • Grill the chicken instead of pan-frying for a smoky flavor.
  • Use ripe but firm mangoes for the best texture.
