  • Author: ranime
  • Total Time: 40 minutes
  • Yield: 8 rolls (serves 4 as appetizer) 1x
  • Diet: Vegetarian

Description

Crispy phyllo-wrapped feta cheese rolls with a sweet-spicy chili honey drizzle – an irresistible Greek-inspired appetizer that combines creamy, crunchy, and spicy-sweet flavors in every bite.

Ingredients

Scale
  • 8 oz (225g) block feta cheese, cut into 8 finger-sized pieces
  • 8 sheets phyllo dough (about 9x14 inches each)
  • 1/4 cup unsalted butter, melted
  • 1/4 cup olive oil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/4 cup honey
  • 1/2 teaspoon crushed red pepper flakes
  • 1 teaspoon lemon zest
  • 1 tablespoon warm water
  • Fresh thyme leaves for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheet with parchment paper.
  2. Mix melted butter and olive oil in small bowl. In separate bowl, combine oregano and garlic powder.
  3. Place 1 phyllo sheet on work surface (keep others covered with damp towel). Brush lightly with butter mixture.
  4. Layer second sheet on top, brush again. Repeat with third sheet (3 layers total).
  5. Cut stacked phyllo lengthwise into 4 strips. Place feta piece at end of each strip.
  6. Sprinkle cheese with pinch of oregano mixture. Roll up tightly, folding in sides like a burrito.
  7. Place seam-side down on baking sheet. Repeat with remaining phyllo and feta.
  8. Brush rolls lightly with remaining butter mixture. Bake 18-20 minutes until golden brown.
  9. Meanwhile, warm honey, red pepper flakes, lemon zest and water in small saucepan over low heat (2 minutes).
  10. Drizzle warm chili honey over crispy feta rolls. Garnish with thyme and serve immediately.

Notes

  • Phyllo tip: Work quickly and keep unused sheets covered to prevent drying
  • For extra crispiness, spray rolls lightly with oil before baking
  • Make ahead: Assemble rolls (unbaked) up to 4 hours in advance
  • Alternative cheese: Halloumi works beautifully too
  • Serve with: Sliced cucumbers, pita wedges, or bitter greens
