Ingredients
- 1 1/2 pounds boneless, skinless chicken breasts
- 1 large red bell pepper
- 1 large yellow or orange bell pepper
- 1 large red onion
- 1 pound andouille sausage, sliced into 1/2 inch rounds
- 1 tablespoon olive oil
- 2 tablespoons Cajun seasoning
- 1 teaspoon dried oregano
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (freshly ground)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss chicken strips and vegetables with olive oil.
- Add Cajun seasoning, garlic powder, salt, and pepper. Mix until evenly coated.
- Spread mixture in a single layer on a large baking sheet.
- Bake for 20-25 minutes, stirring halfway, until chicken is cooked through and vegetables are tender.
- Garnish with fresh parsley before serving.
