Ingredients

  • 1 large red bell pepper
  • 1 large yellow or orange bell pepper
  • 1 large red onion
  • 1 pound andouille sausage, sliced into 1/2 inch rounds
  • 1 tablespoon olive oil
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (freshly ground)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss chicken strips and vegetables with olive oil.
