Description
A vibrant and flavorful one-pan meal featuring tender chicken, rice, and black beans cooked with zesty lime and fresh cilantro. Easy to make and perfect for weeknight dinners.
Ingredients
- 1 lb boneless skinless chicken breasts, diced into 1-inch cubes
- 1 Tbsp canola oil
- Salt and freshly ground black pepper
- 4 green onions, chopped (keep lighter and darker portions separate)
- 2 cloves garlic, minced
- 1 1/2 cups low-sodium chicken broth
- 1 (4 oz) can chopped green chilies
- 2 tsp lime zest & 3 Tbsp lime juice
- 1 (14.5 oz) can black beans, rinsed and well drained
- 2 cups Minute white rice
- 1/3 cup chopped cilantro
Instructions
- Season chicken breasts with salt, pepper, and paprika.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken and cook for 3-4 minutes per side until golden brown. Remove and set aside.
- In the same skillet, add onion and bell pepper. Sauté for 3-4 minutes until softened. Add garlic and cook for 1 minute until fragrant.
- Stir in rice, black beans, corn, cumin, and lime zest. Cook for 1-2 minutes.
- Pour in chicken broth and lime juice. Bring to a simmer.
- Return chicken to the skillet, nestling it into the rice mixture.
- Cover and reduce heat to low. Simmer for 20-25 minutes, until rice is tender and chicken is cooked through.
- Remove from heat. Let stand covered for 5 minutes.
- Fluff rice with a fork. Stir in fresh cilantro and adjust seasoning if needed.
- Serve with additional lime wedges and cilantro.
Notes
- For even cooking, ensure chicken breasts are of uniform thickness.
- Do not skip sautéing the rice briefly to enhance its nutty flavor.
- If using frozen corn, no need to thaw before adding.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
