Ingredients

- 1 cup mashed cooked sweet potato
- 1 and 1/2 cups rolled oats
- 2 large eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/8 tsp salt
- Butter or oil for cooking
Instructions
- In a blender, add the mashed sweet potato, rolled oats, eggs, milk, vanilla extract, cinnamon, baking powder, and salt.
- Blend on high speed until smooth and pourable, scraping the sides as necessary.
- Let the batter sit for 5 to 10 minutes.
- Heat a nonstick skillet over medium heat and add butter or oil.
- Pour about 1/4 cup of batter for each pancake onto the skillet and cook for 2 to 3 minutes.
- Flip and cook for another 1 to 2 minutes until golden brown.
- Serve with butter and maple syrup.
Notes
Use fresh ingredients for the best results. Store leftovers in the fridge for up to 4 days.
