Whisked up with a dash of creativity, these mini meatloaf ghosts blend nostalgia with fun, making Halloween dinners special.

- 1 lb ground beef (preferably 80/20)
- 1/2 cup breadcrumbs (Panko preferred)
- 1/4 cup milk (whole)
- 1 large egg
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups mashed potatoes (homemade or store-bought)
- Black sesame seeds or peppercorns for eyes
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper. Mix until well combined.
- Divide the mixture into 6 equal portions and mold each into mini loaf shapes.
- Place on a baking sheet lined with parchment paper and bake for 25–30 minutes until the internal temperature reaches 160°F (70°C).
- While they bake, prepare your mashed potatoes.
- Pipe the warm mashed potatoes on top of each mini meatloaf to create ghost shapes.
- Press in black sesame seeds or peppercorns for the eyes.
- Serve warm and enjoy!
Notes
Make the mixture ahead of time and refrigerate for convenience. Leftovers can be stored for 3 days in the fridge or frozen for 3 months.
