A stunning layered cake of delicate crêpes filled with luscious mascarpone and a hint of limoncello.
Ingredients

- 1 cup all-purpose flour
- 2 large eggs
- 2 cups milk
- 2 Tbsp melted unsalted butter
- 1 Tbsp sugar
- 1 tsp vanilla extract
- Pinch of salt
- 2 cups mascarpone cheese
- 1 cup heavy cream
- ½ cup powdered sugar
- ¼ cup Limoncello liqueur
- Zest of 1 lemon
- Juice of 1 lemon
- Fresh berries (optional)
- Extra lemon zest (optional)
Instructions
- In a mixing bowl, whisk together flour, eggs, milk, melted butter, sugar, vanilla, and salt until smooth. Let rest for 30 minutes.
- Heat a lightly greased skillet over medium heat, pour ¼ cup batter into the skillet, cooking until lightly golden on both sides. Repeat until all batter is used.
- In a bowl, beat mascarpone, heavy cream, and powdered sugar until thick. Fold in Limoncello, lemon zest, and juice.
- On a platter, layer crêpes with filling, finishing with a plain crêpe on top. Refrigerate for at least 2 hours.
- Garnish with fresh berries and lemon zest before serving.
Notes
Store leftovers in the refrigerator for up to 5 days. This cake tastes better after chilling for a day.
