Description

A stunning layered cake of delicate crêpes filled with luscious mascarpone and a hint of limoncello.


Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups milk
  • 2 Tbsp melted unsalted butter
  • 1 Tbsp sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • 2 cups mascarpone cheese
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • ¼ cup Limoncello liqueur
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Fresh berries (optional)
  • Extra lemon zest (optional)

Instructions

  1. In a mixing bowl, whisk together flour, eggs, milk, melted butter, sugar, vanilla, and salt until smooth. Let rest for 30 minutes.
  2. Heat a lightly greased skillet over medium heat, pour ¼ cup batter into the skillet, cooking until lightly golden on both sides. Repeat until all batter is used.
  3. In a bowl, beat mascarpone, heavy cream, and powdered sugar until thick. Fold in Limoncello, lemon zest, and juice.
  4. On a platter, layer crêpes with filling, finishing with a plain crêpe on top. Refrigerate for at least 2 hours.
  5. Garnish with fresh berries and lemon zest before serving.

Notes

Store leftovers in the refrigerator for up to 5 days. This cake tastes better after chilling for a day.
