Description
Silky smooth mango sorbet made with just 3 ingredients. This refreshing vegan treat highlights the natural sweetness of ripe mangoes with a bright citrus finish.

- 3 cups (about 2 large) ripe mango chunks (fresh or frozen)
- ½ cup (120ml) cold water
- ¼ cup (50g) granulated sugar or honey
- 2 tbsp lime or lemon juice
- Optional: 1 tbsp rum or vodka (prevents over-hardening)
- Optional: Pinch of cayenne for spicy-sweet contrast
Instructions
- Blend all ingredients until completely smooth (about 2 minutes).
- Taste and adjust sweetness/acidity if needed.
- Strain through fine-mesh sieve to remove any fibers (optional).
- Chill mixture for 1 hour in refrigerator.
- Churn in ice cream maker 20-25 minutes until thickened.
- Transfer to airtight container and freeze 4+ hours until firm.
- Let sit at room temperature 5 minutes before scooping.
Notes
- No ice cream maker? Freeze in shallow pan, scraping with fork every 30 minutes.
- For intense color, use Ataulfo (champagne) mangoes.
- Add ½ tsp cardamom or ginger for spiced variation.
- Top with fresh berries or coconut flakes when serving.
