Instructions
- Slice eggplant into 1/2-inch rounds (salt to remove bitterness if desired)
- Pat eggplant slices dry with paper towels
- Combine olive oil, garlic powder, smoked paprika, salt, and pepper in bowl
- Toss eggplant slices in seasoning mixture until evenly coated
- Preheat air fryer to 375°F (190°C)
- Arrange eggplant in single layer in air fryer basket
- Air fry for 15-18 minutes until golden and crispy
- Sprinkle with Parmesan cheese if using and serve
