Description

Ingredients

  • 1 medium eggplant, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Pepper to taste
  • Optional: Parmesan cheese for finishing

Instructions

  1. Slice eggplant into 1/2-inch rounds (salt to remove bitterness if desired)
  2. Pat eggplant slices dry with paper towels
  3. Combine olive oil, garlic powder, smoked paprika, salt, and pepper in bowl
  4. Toss eggplant slices in seasoning mixture until evenly coated
  5. Preheat air fryer to 375°F (190°C)
  6. Arrange eggplant in single layer in air fryer basket
  7. Air fry for 15-18 minutes until golden and crispy
  8. Sprinkle with Parmesan cheese if using and serve
