- 2 lbs (900g) baby potatoes, halved or quartered
- 6 slices bacon, cooked crispy and crumbled
- 1 cup (120g) shredded cheddar cheese
- 1/4 cup (25g) green onions, thinly sliced
- 1/2 cup (120g) sour cream
- 1/2 cup (120g) mayonnaise
- 1 tbsp (15g) Dijon mustard
- 1 tsp (5g) garlic powder
- 1 tsp (5g) onion powder
- Salt and black pepper to taste
- Optional: 2 hard-boiled eggs, chopped
- Optional: 1/4 cup (15g) fresh chives, chopped
Instructions
- Cook potatoes: Boil potatoes in salted water until fork-tender (12-15 mins). Drain and let cool slightly.
- Prepare dressing: In a bowl, mix sour cream, mayonnaise, Dijon mustard, garlic powder, onion powder, salt, and pepper.
- Combine: Gently fold warm potatoes, bacon, cheddar cheese, green onions, and optional eggs into the dressing.
- Chill: Refrigerate for at least 1 hour before serving to let flavors meld.
- Garnish: Top with extra bacon, cheese, and chives before serving.
Notes
- For a lighter version, substitute Greek yogurt for sour cream.
- Best served cold but can be kept at room temp for short gatherings.
