A decadent loaded baked potato salad that combines creamy potatoes with crispy bacon, cheddar cheese, green onions, and a tangy sour cream dressing. This hearty side dish brings all the flavors of a loaded baked potato to your picnic or barbecue.

- 3 lbs russet potatoes, peeled and cubed
- 1 tbsp salt (for boiling water)
- 8 slices bacon, cooked and crumbled
- 1 1/2 cups sharp cheddar cheese, shredded
- 1/2 cup green onions, thinly sliced
- 3/4 cup sour cream
- 1/2 cup mayonnaise
- 2 tbsp Dijon mustard
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp black pepper
- 1/4 tsp paprika
- Salt to taste
- Optional toppings: additional bacon, cheese, green onions, or chives
Instructions
- Place cubed potatoes in a large pot and cover with cold water. Add 1 tbsp salt and bring to a boil.
- Reduce heat and simmer for 10-12 minutes until potatoes are tender but still firm. Drain and let cool slightly.
- In a large bowl, whisk together sour cream, mayonnaise, Dijon mustard, garlic powder, onion powder, pepper, and paprika.
- Add warm potatoes to the dressing and gently toss to coat.
- Fold in crumbled bacon, cheddar cheese, and green onions, reserving some for garnish.
- Taste and adjust seasoning with additional salt if needed.
- Cover and refrigerate for at least 2 hours to allow flavors to blend.
- Before serving, garnish with reserved bacon, cheese, and green onions. Sprinkle with paprika if desired.

- For best texture, don’t overcook the potatoes – they should hold their shape when mixed.
- This salad tastes even better the next day as flavors develop.
- For a lighter version, substitute Greek yogurt for half the sour cream.
