  • 8 slices bacon, cooked and crumbled
  • 1 1/2 cups sharp cheddar cheese, shredded

  • 3/4 cup sour cream
  • 1/2 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/4 tsp paprika
  • Salt to taste
  • Optional toppings: additional bacon, cheese, green onions, or chives

Instructions

  1. Place cubed potatoes in a large pot and cover with cold water. Add 1 tbsp salt and bring to a boil.
  2. Reduce heat and simmer for 10-12 minutes until potatoes are tender but still firm. Drain and let cool slightly.
  3. In a large bowl, whisk together sour cream, mayonnaise, Dijon mustard, garlic powder, onion powder, pepper, and paprika.
  4. Add warm potatoes to the dressing and gently toss to coat.
  5. Fold in crumbled bacon, cheddar cheese, and green onions, reserving some for garnish.
  6. Taste and adjust seasoning with additional salt if needed.
  7. Cover and refrigerate for at least 2 hours to allow flavors to blend.
  8. Before serving, garnish with reserved bacon, cheese, and green onions. Sprinkle with paprika if desired.
