Ingredients
Scale
- 6–8 ripe kiwis (about 2 cups peeled and chopped)
- 3/4 cup granulated sugar
- 1/2 cup water
- 1 tbsp fresh lemon juice
- 1 tbsp vodka or kiwi liqueur (optional, for smoother texture)
- Pinch of salt
Instructions
- Peel and roughly chop kiwis. Place in blender or food processor.
- In small saucepan, combine sugar and water. Heat over medium until sugar dissolves (about 3 minutes). Let cool slightly.
- Add sugar syrup, lemon juice, vodka (if using), and salt to kiwis. Blend until completely smooth.
- Strain mixture through fine-mesh sieve to remove seeds.
- Chill mixture in refrigerator for at least 2 hours (preferably overnight).
- Pour into ice cream maker and churn according to manufacturer’s instructions (about 20-25 minutes).
- Transfer to airtight container and freeze for 2-4 hours until firm.
- Let sit at room temperature 5 minutes before scooping.
Notes
- For no-churn version: Freeze in shallow container, stirring every 30 minutes for 3-4 hours
- Choose very ripe kiwis for maximum sweetness
- Adjust sugar based on kiwi sweetness – taste before freezing
- Alcohol prevents sorbet from freezing too hard
- Garnish with mint leaves or kiwi slices when serving
