Description

  • 68 ripe kiwis (about 2 cups peeled and chopped)
  • 3/4 cup granulated sugar
  • 1/2 cup water
  • 1 tbsp fresh lemon juice
  • 1 tbsp vodka or kiwi liqueur (optional, for smoother texture)
  • Pinch of salt

Instructions

  1. Peel and roughly chop kiwis. Place in blender or food processor.
  2. In small saucepan, combine sugar and water. Heat over medium until sugar dissolves (about 3 minutes). Let cool slightly.
  3. Add sugar syrup, lemon juice, vodka (if using), and salt to kiwis. Blend until completely smooth.
  4. Strain mixture through fine-mesh sieve to remove seeds.
  5. Chill mixture in refrigerator for at least 2 hours (preferably overnight).
  6. Pour into ice cream maker and churn according to manufacturer’s instructions (about 20-25 minutes).
  7. Transfer to airtight container and freeze for 2-4 hours until firm.
  8. Let sit at room temperature 5 minutes before scooping.

Notes

  • For no-churn version: Freeze in shallow container, stirring every 30 minutes for 3-4 hours
  • Choose very ripe kiwis for maximum sweetness
  • Adjust sugar based on kiwi sweetness – taste before freezing
  • Alcohol prevents sorbet from freezing too hard
  • Garnish with mint leaves or kiwi slices when serving
